Ingredients
1 1/2 cups black beans or 1 15oz can drained and rinsed very well
2 1/2 Tbsp cocoa powder
1/3 cup quick oats
1/2 cup maple syrup
1/4 cup melted coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1 tsp of cardamom
pinch of sea salt
2/3 cup mini chocolate chips or 1/2 cup regular chocolate chips
*Optional extra 1/4 chocolate chips for on top
Instructions
Preheat oven to 350 F and grease an 8x8 baking pan.
In a food processor combine all of the ingredients except the chocolate chips.
Blend in food processor until smooth batter like consistency. If the consistency is thin add a few more quick oats a little at a time to reach a thicker consistency.
Stir in chocolate chips and pour the batter into the greased 8x8 pan.
*Optional sprinkle chocolate chips over the top.
Cook the brownies for 18-20 minutes until firm. Remove from oven and let rest for 10 minutes. If they still seem under-cooked you can place in fridge and they will firm up and be perfectly fine.
Cut into desired pieces and enjoy.
